This simple combination pairs tender roasted cauliflower with a creamy mash of white navy beans and yogurt. It’s a satisfying, fiber-rich Autophagy Week recipe designed to fit within the roughly 900-calorie-per-day meal plan.

Ingredients:

  • 1 cup cauliflower florets
  • 2 tsp extra-virgin olive oil
  • A pinch of salt and pepper
  • ½ cup canned white navy beans, drained and rinsed
  • 2 tbsp plain yogurt or water (for creaminess)

Directions:

  1. Preheat the oven to 400°F.
  2. Toss the cauliflower with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 20 minutes, until tender and lightly browned.
  4. Mash the beans with yogurt (or water) in a small bowl or food processor until smooth. Season with salt and pepper to taste.
