Ingredients:
- 1 cup cauliflower florets
- 2 tsp extra-virgin olive oil
- A pinch of salt and pepper
- ½ cup canned white navy beans, drained and rinsed
- 2 tbsp plain yogurt or water (for creaminess)
Directions:
- Preheat the oven to 400°F.
- Toss the cauliflower with olive oil, salt, and pepper on a baking sheet.
- Roast for 20 minutes, until tender and lightly browned.
