Fire up the grill for a fresh take on a classic favorite. These savory-sweet chicken yakitori skewers are paired with fiber-rich quinoa, broccoli, and edamame to create a balanced meal that's easy to prepare, packed with protein, and perfect for a healthy weeknight dinner or summer cookout.

Ingredients:

  • 8 oz skinless, boneless chicken breasts
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • 3 cups steamed broccoli florets
  • 1½ cups cooked quinoa
  • 1 cup steamed shelled edamame

Directions:

Cut the chicken into bite-size pieces.

Toss the chicken with the soy sauce and honey, then thread evenly onto 2 skewers.

Heat an outdoor grill or stovetop grill pan to medium-high. Grill the chicken for 6–8 minutes, turning occasionally, until fully cooked.

Serve each chicken skewer with half of the broccoli, quinoa, and edamame.
