This breakfast bowl earns its place on the Ajenda table because it combines protein, fiber, and vegetables in one simple meal. Eggs and egg whites provide the protein base, while black beans and feta add even more protein, and spinach and red bell pepper bring in multiple servings of vegetables. Salsa adds a flavorful finish without making breakfast complicated.
Ingredients:
- 2 eggs
- ¼ cup egg whites
- Salt and pepper to taste
- 2 cups chopped, stemmed spinach
- ¼ cup canned black beans, rinsed
- 1 tsp extra-virgin olive oil
- ½ red bell pepper, finely chopped
- 2 tbsp salsa
- 1 tbsp crumbled feta
Directions:
Whisk eggs and egg whites in a medium bowl. Season with salt and pepper.
Place spinach and beans in a microwave-safe bowl, cover, and microwave on high until the spinach wilts, stirring once, 1–2 minutes. Season.
Heat oil in a small nonstick skillet over medium. Add bell pepper and cook until softened, about 2 minutes. Add eggs and stir until just set.
Spoon eggs over the spinach mixture.
Top with salsa and feta.
