Made with simple, wholesome ingredients and packed with over 30g of protein, they’ll keep you full and energized without weighing you down. Perfect for post-workout fuel, weekend brunch, or just a cozy morning at home.
Ingredients:
- 1 cup rolled oats
- 2 scoops protein powder
- 1 banana
- 1 egg
- ½ tsp cinnamon
- ½ cup almond milk
- 1 tsp vanilla extract
- Pinch of sea salt
- Optional: 1 tsp citrus zest for extra flavor
- ½ cup plain non-fat greek yogurt or coconut yogurt (for topping)
- ½ cup fresh berries (for topping)
Directions:
- In a blender, combine the oats, protein powder, banana, egg, almond milk, cinnamon, vanilla extract, sea salt, and citrus zest (if using) and blend until smooth.
- Spoon small amounts of batter onto a hot, lightly oiled skillet to form pancakes.
- Cook until bubbles form and the edges start to set, then flip and cook until golden.
- You should end up with about 12 pancakes.
- Top each serving with ¼ cup unsweetened coconut or Greek yogurt and ¼ cup berries.
- Freeze any extra pancakes for an easy future breakfast!
